
Florence Fennel
Florence fennel is very much a gourmet vegetable. It produces green, feathery leaves which can be used to flavour or garnish a dish, but the fan-shaped bulb of the plant is most commonly eaten. It has a crisp texture and an aniseed flavour. With this crop, the timings must be right, otherwise you risk the plant “bolting”, so they need a little extra care and attention. We sow our Florence fennel seeds in June and transplant in July, allowing the crop to be harvested in late summer or early autumn.
